Perfect for Holiday & New Year's parties

Johnnie's 3 favorite, easy recipes:

Praline Sweet Potatoes (makes 10 servings)
Forget about calories...this is a vegetable...REALLY!!!

40 oz. can of drained cut yam
1/2 cup chopped pecans
1/2 cup packed brown sugar
1/4 cup flour
1/4 cup melted butter

Heat oven to 350 degrees. Place yams in an ungreased casserole/baking dish. Mix remaining ingredients and sprinkle evenly over the potatoes. Bake for 35-40 minutes.

Johnnie's Critically Acclaimed Key Lime Pie
I hesitate to reveal this since it's so often requested for parties and special occasions...fans of this pie will be surprised at how SUPER SIMPLE this is...but, here goes!!!

At most grocery stores you can find "Nellie and Joe's Famous Key West Lime Juice." Johnnie finds it at Jewel and Dominick's in the juice aisle and it's the ONLY juice to use!

1 can of sweetened condensed milk
3 egg yolks
1 prepared graham cracker crust (for gluten-free diets I use gluten-free crackers or Pamela's Shortbread Cookies ground and mixed with 4 tb. of melted butter)
1/2 c. juice

Mix juice, milk and yolks well. Pour into crust and bake at 350 degrees for 10 minutes to set. After the pie cools cover and freeze. Can let sit at room temperature for 10 minutes before serving or eat frozen!!

Hawaiian Salad
This will definitely become a Holiday staple!!

1 can crushed pineapple/undrained
1 bag (large) mini marshmallows
1/2 bag of sweetened flake coconut (more if you're coconut crazy)
1 can (small) mandarin orange slices/drained (reserve 8-10 slices for decoration)
1 16oz. carton of sour cream (light works well) Start by using 3/4 of carton and add more if you feel you need it.

In a large bowl mix all of the ingredients well and pour into a serving bowl. Press and smooth the top. Decorate the center with the orange slices in a pinwheel/flower fashion.

Holiday Party Punch (makes about 12 servings)

2 cups boiling water
3/4 cup honey (light colored or clover is best)
4 cups cranberry juice
2 cups orange juice
1 cup lemon juice
1 quart of ginger ale
ice cubes

Combine boiling water and honey, stirring until dissolved. Chill. In a large punch bowl combine cranberry juice, orange and lemon juices. Stir in Honey mixture. Just before serving add ginger ale and ice cubes.

Fabulous Pistachio Dessert

12 oz. tub Cool Whip
1 pkg Jello Pistachio Pudding
16-20 oz. can crushed pineapple, undrained
(Additional Cool Whip for garnish)

Mix first 3 ingredients together thoroughly with a spoon (not a mixer). Chill. Serve in dessert dishes with a dab of Cool Whip on top. So simple and really delicious!!

Aunt Louise's Jello

1 #2 can crushed pineapple
1 jello (small) any flavor
1 lb small curd cottage cheese
1 8 oz cool whip

Add crushed pineapple and jello in pan and boil lightly about 5 minutes. Let it cool and add the 1 lb cottage cheese and cool whip. Mix well and refrigerate overnight. You can put this in corning ware or a 9 x 13 dish.

No matter how full you are there is always room for this dessert!

(must be made at least 12 hours before serving so the crackers get soft)

1 large or 2 small boxes of instant French vanilla pudding. (if French vanilla can't be found use regular vanilla and add 1 tsp. vanilla extract)
1 box regular graham crackers
3 cups of milk
1 8 oz cool whip (thawed)
1 container of ready made milk chocolate frosting

In a 9 x 13 in. pan line the bottom of pan with crackers, 1 layer. In a large bowl mix together pudding and milk. Mix cool whip in pudding mix. Pour half of pudding/cool whip mix over top of 1st layer of crackers. Lay another layer of crackers on top of pudding (2nd layer). Pour remainder of pudding on top of crackers. Lay last layer of crackers on top (3rd layer). Melt the frosting in the microwave 30 seconds to 1 minute or until pourable. (Make sure all the foil seal is off of container) Stir with a fork. Pour over the top of crackers.

 

**You can use low fat or generic ingredients if you like.
